ROTI NACHO’S CHAAT | LEFT-OVER ROTI NACHO’S CHAAT

We all sometimes have the roti’s left behind in our kitchens.So we always either try to do roti churma with them.But here I am doing something different with it.I am preparing a Left-over Roti Nachos Chaat.Leftover roti’s are dry hence when we fry them they become more crispy.Whenever we have these leftover roti’s in our house we prepare these nachos and serve it with tomato sauce or our homemade pickle.

But in this recipe of nachos I am topping them with boiled chana/brown chickpeas,curd,tamrind chutney,onion and sev.This is the Indian version of nachos which really tastes yummicious.

We can prepare different styles of Nachos like,

  • Papad Nachos
  • Khakhra Nachos
  • Roti Nacho Chips

INGREDIENTS :

For Roti Nacho’s :

  • 4 leftover roti’s
  • Oil for frying

For Topping :

  • 1 cup of boiled chana/brown chick peas.
  • 1 tsp crushed garlic
  • 1 tsp chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp chole masala powder
  • Salt to taste
  • Oil for cooking

For Garnishing :

  • Roti Nacho’s
  • Chana sabji topping
  • 1 big sized chopped onion
  • Tamrind chutney
  • Sweetened curd/dahi
  • Chaat masala powder
  • Sev / Nylon Sev
  • Chopped coriander



METHOD :

  • First soak the chana’s overnight.
  • Next day remove the excess of water from it.
  • Place the chana’s in a cooker and add a bit salt.
  • Cook them in a cooker for 3-4 whistles.
  • After cooking remove the boiled chana’s in a bowl.
  • At the same time remove the excess water from the boiled chana’s separately so that we can use it during cooking.
  • Now for making nachos take the leftover rotis.
  • Place it on a plane surface and cut them in half.
  • Now again make the triangular pieces of these roti’s.
  • In this way you make 8 equal triangular pieces/nacho’s out of one roti.
  • In a pan/kadhai add oil to heat.
  • Once the oil becomes hot enough add nachos and fry them till crispy golden brown.
  • Remove the fried nachos into the plate.
  • Keep it aside.
  • Now in another pan add oil to heat.
  • Add crushed garlic.
  • Once the garlic turns golden brown add chilli powder,turmeric powder,coriander powder and chole masala powder.
  • Add salt to taste.
  • Saute the masala’s properly.
  • Now add the boiled chana’s to the pan.
  • Give it a nice mix.
  • Smash the chana’s with potato smasher to a fine paste.
  • Now add the leftover water from the boiled chana’s.
  • Let it cook for next few minutes.
  • Your Chana Topping is ready.


METHOD FOR PLATING :

  • In a plate place the roti nachos.
  • First add chana toppings on each nacho’s and spread it evenly over the nacho’s.
  • Now pour tamrind chutney followed by sweet curd/dahi over the nacho’s.
  • Put the chopped onions over it.
  • Sprinkle the chaat masala.
  • Next add the sev /nylon sev over the toppings.
  • Finally garnish it with chopped coriander leaves.
  • Your mouth watering Nacho’s Chaat is rady to eat.



NOTE :

  • Always use the leftover roti’s for making roti nacho’s because these roti’s are dry and on frying it becomes more crispy.
  • On other hand we don’t get this result with the fresh roti’s because of the moisture content in the fresh roti’s.
  • But if still you want to prepare nacho’s from fresh roti’s then keep the cut roti pieces in microwave mode for 1 minutes and your roti will become dry.
  • Or else roast the roti’s on the tava till it becomes dry.
  • You can add any type of toppings as per your taste.
