CHRISTMAS RUM CAKE | CHRISTMAS FRUIT CAKE | CHRISTMAS CAKE RECIPE
The Christmas Fruit And Rum Cake is a dark,moist and rich fruit cake which contains candied or dried fruits,nuts and spices which are optionally soaked in any one of the alcohols like rum,whisky,brandy,wine or fruit juice. Christmas cake preparations are started about months before the Eve of Christmas.
Here I have added egg’s to cake.You can prepare it eggless also.. I will be adding soon the Eggless Christmas Fruit Cake recipe.
This is my first Christmas Rum Cake and the first attempt of this cake was really one of the best one.
Traditionally the fruits are soaked in the rum/whisky/brandy or fruit juice for about weeks before the eve of Christmas.In this recipe I have soaked the fruits in Rum.

Here in this cake the soaked fruits (of your choice) and the dried fruits like cheshew nuts,almonds,pista,etc are added to the cake batter along with sugar which has been caramelized by boiling water,due to which this the cake gets the lighter texture.
The spices added to this cake batter also gives a nice taste to the cake.
Also this Christmas Cake is so rich in nature that it is so often consumed on their own without any type of frosting(such as butter or cream).

CHRISTMAS RUM CAKE | CHRISTMAS FRUIT CAKE | CHRISTMAS CAKE RECIPE

(1 CUP = 250 ML)
INGREDIENTS :
- 1 ½ cup maida / all purpose flour / मैदा
- 1 cup powdered sugar / पिठी साखर
- 100 ml butter / लोणी
- 3 eggs / अंडे
- ¾ cup rum soaked fruits (click for full recipe)
- ½ cup chopped dry fruits (cheshew nuts,almonds,pista)
- ¼ tsp cardamom powder / विलायची पावडर
- ¼ tsp cinnamon powder / दालचिनी पावडर
- ¼ tsp ginger powder / सुंठ पावडर
- ¼ tsp nutmeg powder / जायफळ पावडर
- 1 tsp baking powder
- ¼ tsp vanilla essence
For Making Caramelized Sugar Syrup :
- 2-3 tbsp sugar
- ½ cup water
METHOD :
For Making Caramelized Sugar Syrup :
- Firstly add sugar to a sauce pan.
- Let the sugar melt.
- After melting the sugar gets caramalized.
- Now slowly add water to the caramalized sugar and be careful while doing it because the water may splutter up out due to hot sugar.
- Mix water and caramalized sugar nicely.
- Caramelized sugar syrup is ready.
For Making The Christmas Fruit and Rum Cake :
- First take maida and reserve 2-3 tbsp of maida for later mixing with the fruits mixture.
- Now sieve the remaining maida,cardamom powder, cinnamon powder, ginger powder, nutmeg powder and baking powder 2-3 times nicely.
- In another bowl add the rum soaked fruits and the chopped dried fruits.
- Mix them well.
- Add about 2-3 tbsp maida to the fruits mixture.(This is done so that the fruits don’t get settled down at the bottom of the cake batter).
- Mix them well and keep this maida coated fruit mixture aside.
- Next line the baking tray with butter paper or grease the baking tray with butter and then dust the maida all over the tray.
- Keep this tray aside.
- Now in a bowl add 3 eggs.
- Add vanilla insence to the mixture.
- Beat this egg till the eggs becomes fluffy.
- Now add powdered sugar and butter.
- Beat this both till the butter and sugar gets mixed properly with the egg batter.
- Beat till the mixture gets smooth and fluffy.
- Add the caramelized sugar syrup to the mixture.
- Mix well.
- Now add the sieved maida mixture in two batches to the above beaten mixture.
- Mix the mixture by cut and fold method slowly.
- Now add maida coated fruits mixture to the batter.
- Slowly and properly mix everything.
- Your cake batter is ready now.
- Meanwhile Preheat the oven to 180 degrees for 5-10 minutes.
- Pour this cake batter into the greased tray.
- Spread the cake batter evenly with the help of spoon.
- Tap the cake tray nicely so that the batter gets settled down nicely.
- Now immediately keep the baking tray into the oven.
- Bake the cake at 180 degrees for next 40-45 minutes in the preheated oven.
- After 40-45 minutes remove the tray and let it get cooler for next 10 minutes.( I had kept this cake for 45 minutes for baking.This time of baking varies with the type of oven models.)
- Remove the cake from the oven and let it cool down.
- After cooling turn the tray upside down on a plate and tap the tray from bottom to remove the cake.
- Your Christmas Fruits and Rum Cake is ready.
