Chakli | Diwali Special Recipe | Khamang Chakli is one of the famous maharashtrian dish which is basically prepared during the festive seasons.Its prepared in different parts of Indian with different variation.

It is a deep fried snacks made from Bhajani flour which is prepared by roasting different lentils.It is one of the most popular Diwali Faraal (snacks)

Here we are preparing it in Maharashtrian style with the help of chakli bhajani.Chakli is generally a spiral shaped and has spikes on its surface.Its crispyness depands on how one fries it.

Chakli | Diwali Special Recipe | Khamang Chakli

INGREDIENTS :

  • 2 cups Chakli bhajani ( चकली भाजणी )
  • 1+1/4 cups Water ( पाणी )
  • 1-2 tsp chilli powder ( लाल तिखट )
  • 1-2 tsp carom seeds ( ओवा )
  • 1-2 tbsp white sesame seeds (पांढरे तीळ)
  • 1/4 tsp asofoetida ( हिंग )
  • 1/4 tsp Turmeric powder ( हळद )
  • 1 tbsp cooking oil ( तेल )
  • Salt as per taste
  • Oil for frying



METHOD :

  • In a pan keep water to boil.
  • Add chilli powder,carom seeds,white sesame seeds,hing,turmeric powder,salt.
  • Add 1 tbsp oil.
  • Mix well.
  • Let this water boil.
  • When this water starts boiling add the chakli bhajani to the boiling water ( उकळते पाणी ).
  • Now immidiately stir the chakli bhajni flour with the spoon.
  • Cover it with plate for next 10-15 minutes.
  • After 10-15 minutes knead this dough evenly.
  • Knead this dough in a soft dough.
  • Now take a chakli maker. ( चकलीचा सोऱ्या ).
  • Attach the star mold (चकलीची चकती) plate to it.
  • Grease the chakli maker with oil from inside.
  • Stuff the chakli dough into the chakli maker.
  • Close and tighten the chakli maker.
  • Now move it in a circular way to prepare a chakli.
  • Seal the ends of the chakli.
  • In same manner prepare other chakli’s.
  • In a kadhai or pan keep the oil to heat.
  • When this oil is heated slowly insert the chakli into the oil.
  • Deep fry it on medium flame till the chakli changes its colour.
  • Keep in mind that you don’t have to fry the chakli’s on high flame or else the chakli won’t become crispy.
  • Now remove the fried chakli on the tissue paper to drain the excess of oil.
  • Your chakli is ready to eat.



RECIPE NOTE :



1. The water I have used for making the chakli dough can vary.You could need more or less water depanding on how much the Bhajni flour absorbs it.

2. But keep try using less water first.As it can be added afterwards also while kneading the dough.

3. Incase if the chakli dough becomes too much soft then you can add extra chakli Bhajni flour to it and again knead it.

4. Also don’t add too mch of oil while preparing the dough because excess oil may result in more absorption of oil by chakli while frying and also the chakli’s may get melted or broken to pieces while frying.

5. The one basic and important thing that is to be noticed while preparing chakli is that you have to fry them on medium flame only.

6. Because frying on medium flame will make the chakli’s crispier.

7. Have patience while frying the chakli’s.
