Appe or Paniyaram or Padu is an Indian dish which is made by steaming or frying the rice and lentils batter.Usually it is prepared from the batter of rice and black spilt lentils(urad dal) or from the dosa or idli batter.This are crispy from outside and soft from inside.It is one of the most healthiest form of breakfast or for tiffin.
But here I am making the mixed dal appe or mixed lentils appe.This is a healthy form as different type of lentils are mixed.Here I have used urad dal,chana dal and moong dal along with rice.The dals are washed and soaked together and the rice is also washed and soaked for 7-8 hours.These are then grinded to paste(not to fine paste) and then both the dals and rice are mixed together and kept for the process of fermentation.
Once nice fermented I have mixed the chopped onion,tomatoes chill-garlic paste to the batter.This makes the appe more healthy,nutritious and delicious.One can add different Vege’s of their choice.
These are prepared in special type of pan or mould which has several dents in it.This dents are brushed with some oil and then the appe batter is poured into this dents.Thesee then steamed by pouring some more oil over it.
Once prepared the Appe’s are served with Coconut Chutney.

Mixed Dal Appe Video Recipe:

INGREDIENTS :
For making Batter :
- 3 cup Rice
- 1 cup Chana dal
- ½ cup urad dal
- ½ cup moong dal
- ½ tsp fenugreek seeds/methi
- Water for soaking
For making Appe :
- 2-3 medium chopped onions
- 2 small chopped tomatoes
- 1-2 tbsp green chilli-garlic paste
- Chopped coriander leaves
- Chopped curry leaves
- ½ tsp jeera
- Salt to taste
- Oil
METHOD :
For making Batter :
- First wash the rice and the dals separately.
- Now soak the rice.
- Also soak the dals together.
- Also soak the fenugreek seeds/methi seeds.
- Soak them for 7-8 hours.
- Once properly soaked drain the excess water from the rice and dal.
- Now first grind the rice in mixer grinder to fine paste.
- Also grind the dals and methi seeds to fine paste.
- Now mix both the grinded rice and dal in a bowl.
- Mix them properly.
- Keep this batter for fermentation.
- Once nicely fermented the batter is ready for making the appe’s.
For making Appe :
- In a pan or kadhai add oil.
- Temper it with jeera and chopped curry leaves.
- Add chopped onions and saute till turns golden brown.
- Add chilli-garlic paste to the onions and once again saute.
- Now add chopped tomatoes.
- Mix and saute everything.
- Add this mix to the fermented batter.
- Add salt as per your taste.
- Add chopped coriander leaves.
- Give everything a nice mix.
- Now heat up the appe mould.
- Greese the dents of the mould with oil.
- Pour the batter into the dents of the mould.
- Pour some more oil on the batter.
- Cover the mould with the lid.
- Cook it for next 5-8 minutes.
- Now flip the appe and cook them from another side.
- If required drizzle some more oil over them.
- Cook them till the appe turn nice and crisp.
- Once cooked properly the Appe or Paniyaram are ready to eat.
- Serve them hot with Coconut Chutney.
