A south indian form of cuisine.Its a mix of lentils and variety of vegetables.But in this recipe of sambhar I am not using the vegetables,just using onion.But still the taste is maintained.As we all know it’s served with most of the South Indian dishes like ;
- Idli
- Medu Vada
- Masala dosa
- Potato wada (बटाटावडा)
- Uttappa

INGREDIENTS :
- 1/2 cup Tur/ arhar/ yellow split pigeon peas ( तूर डाळ )
- 1 medium size onion ( उभा चिरलेला कांदा )
- Coriander leaves ( कोथिंबीर )
- Curry leaves ( कडीपत्ता )
- 2 tspoon chilli powder ( लाल तिखट )
- 1 1/2 tspoon sambhar masala (सांभर मसाला )
- 1/2 tspoon turmeric powder ( हळद )
- 1/2 tbspoon of tamarind pulp ( चिंचेचा कोळ )
- Jaggery ( गुळ ) to maintain the sourness of tamarind .
- Salt to taste.
- 2 tbspoon cooking oil.
METHOD :
- Wash the dal first nicely.
- Now keep the dal in pressure cooker till 4-5 whistles.
- Let the dal cook nicely.
- Slice the onions in small pieces.
- Heat the oil in the pan.Now add mustard seeds,cumin seeds.
- Now add sliced onions and curry leaves and saute the onions till the onions changes the colour to brown.
- After roasting the onions properly add turmeric powder, chilli powder and saute it well.Now add sambhar masala.
- Saute the whole mix in proper way.
- Saute the whole masala properly.Now add cooked tur dal(तूर डाळ) to the pan.
- Mix the masala and dal evenly.
- Add required amount of water to the mixture and aquire the proper consistency.
- Add tamrind pulp and jaggery to balance the taste of tamrind.(Quantity of tamrind and jaggery addition are to your choice.)
- Let it cook for next 10-15 minutes.Garnish it with coriander leaves.
- Your Sambhar is ready.
- You can eat sambhar with idli,medu vada,masala dosa or uttappa…
