This kheer tastes so creamy & delicious because the sweet potatoes adds their creaminess & sweetness to the kheer.

Ratalyachi Kheer | Sweet Potato Pudding

Ingredients :
- 250 gms Sweet Potato / Ratale / Shakarkandi
- 1 ltr Milk
- ½ cup Sugar (adjust as per your taste)
- ¼ cup Desi ghee
- 1 tsp Cardomom / Elaichi powder
- Dry fruits as per your choice
- Pista for Garnishing
- Saffron Milk or Kesar strands as needed

Step by step method of preparing Ratalyachi Kheer | Sweet Potato Pudding
- Steam the sweet potatoes till they are nicely cooked.
- Once steamed peel off the skin from them.
- Now chop or cut the sweet potatoes into pieces.

- Reduce the milk to its ¾ th quantity.
- Now in a pan add ghee.
- Roast the steamed sweet potaoes in the ghee.

- Add the reduced milk to it.

- Add sugar as required.
- Mix well.

- Add the cardamom powder & dry fruits to it.

- Add saffron milk to it.
- Mix well.

- Let it cook for next 10-15 minutes on low flame.
- Your Ratalyachi Kheer or Sweet Potato Pudding is ready to serve.
- Garnish it with pista’s.
- For best taste serve it chilled.
- Also when it cools down,the consistency of kheer becomes thicker.
- At this time you can add milk to dilute the kheer.
