
How To Make Boondi Laddoo | Boondi Laddu is one of the most famous Indian sweet.It is also the most popular dessert.Boondi laddoo are deep fried pearls cooked in desi ghee or oil and then are soaked in sugar syrup.
Celebration means laddoo and Boondi Laddoo is a delicious Indian sweet made for special occasions.This is also the most popular sweet among the Hindu Gods.You will never find lord Ganesha idol without Laddo in his hand.We also worship Ganesha before starting any auspicious activity.Thus, Ladoo also becomes an integral recipe in any auspicious ceremonies.These laddoo’s are loved by people of all ages.
What is Boondi
Boondi are deep fried pearl like balls made from batter of gram flour or chickpea flour or besan.The word ‘Boondi’ means droplet or boond in hindi.These tiny droplets are deep fried in desi ghee or oil to form boondi.
Difference Between Boondi Laddoo & Motichoor Laddoo
Boondi Laddoo has a bit bigger sized of boondi than the Motichoor Laddoo.The ladle or Jhara used for Motichoor Laddoo has very tiny holes on it.Generally ‘Zero to 1’ numbered Jhara is used for making the boondi of Motichoor Laddoo.
Boondi Laddoo can be prepared by the regular jhara or regular flat slotted spoon used for frying in our household.We also get the Boondi Jhara in local market.I have used the market bought Jhara for making boondi.If you use a regular slotted spoon,then you won’t get regular round shaped boondi’s.
The sugar consistencies for both varieties of laddoo’s is same.The sugar syrup with 1-string consistency (1- taar chashni).
The textures of granules also differ for both varieties.Motichur Laddoos granules have a melt in the mouth and velvety texture, whereas the Boondi laddoos have a slightly more complex texture.
Ingredients needed to make Boondi Laddoo
Besan | Gram Flour – Besan is the key ingredient to make the delicious Boondi Laddoo.For these laddoos,we need to use thin besan to achieve better consistency of the batter.
Food color – The beautiful Keasr colour makes the laddoos look so tempting.But the addition of colour is totally optional.
Desi Ghee Or Oil – You may use homemade ghee for this recipe and reach for a divine flavour.Alternatively,you can also use any neutral flavored refined oil.I have used sunflower oil for frying the boondi.And added desi ghee later while making the laddoo’s.
Sugar – Added for sweetening our deliciousladdoos.
Cardamom powder – Lends a refreshing floral aroma along with a pleasant flavor to the sugar syrup.
Water – Water is used to prepare the batter.
Dry fruits – Melon seeds is the must for Boondi Laddoo’s.Along with it cashew nuts,almonds,pistas are added.
How to make Boondi Laddoo
A thin gram flour (besan) batter is poured through a perforated flat ladle or sieve (or boondi ladle) over a hot pan of oil. The batter droplets fall into the oil and quickly fry into crispy little balls,which are then added to a hot sugar syrup.Note that the sugar syrup should be hot when you add the boondi.
How to check the consistency of sugar syrup
The sugar syrup will be very hot when you check the consistency. So take it in a small spoon or add a few drops on a plate and let it cool a bit for a few seconds.When the heat is fine to handle, check the consistency by touching the syrup between your thumb and forefinger. You should see one string forming when you touch first and then pull your fingers apart.

How To Make Boondi Laddoo | Boondi Laddu

Ingredients :
- 3 cups Besan | Gram flour
- 3 cups Sugar
- 2 cups Water
- ½ cup Desi ghee
- Sunflower oil for frying boondi (you can fry boondi in desi ghee too)
- ½ cup Dry fruits
- ¼ cup Magaj | Melon seeds
- ¼ – ½ tsp Kesar Food Colour (optional)
- 1 tsp Cardomom / Elaichi powder
- Perforated Ladle or Boondi Jhara
Step by step method of preparing How To Make Boondi Laddoo | Boondi Laddu
For Making Boondi
- To make the boondi batter,Sieve in the gram flour or besan first to break the lumps in the flour.
- Further add water,in batches while whisking it continuously to make a lump free,thin & smooth batter.
- Add food colour to the batter.(Addition of colour is totally optional)

- In a pan or kadhai add cooking oil or desi ghee for frying boondi.(I have used sunflower oil for frying)
- Using a Perforated Spoon/ladle or Boondi Jhara,Pour in the batter over the ladle or jhara.
- Once the batter is poured on the ladle keep the ladle tapping so that the boondi drops fell uniformly into the oil.

- Fry the pearls on medium flame until light golden brown,make sure you don’t fry them too much.
- Once fried,transfer the boondi into a sieve using a ladle & gently give a jerk to the sieve to remove any excess oil.
- Further transfer the fried boondi from the sieve to a plate & fry all the boondi similarly & let them cool down completely.

- Your Boondi for Boondi Laddoo is ready.
For Making Sugar Syrup
- Add sugar and water in a deep-bottomed heavy pan.
- Allow the sugar to melt completely.
- Cook on medium flame.

- Allow to cook until it begins to thicken to a one string consistency.
For Making Laddoo
- Add the fried boondi immediately to the hot sugar syrup.
- Let the boondi soak into the syrup.

- In a pan heat the ghee.
- Add dry fruits and melon seed to ghee and fry on low flame.

- Pour all this along with ghee into the boondi laddoo mix.(addition of desi ghee at this stage gives a very delicious taste to the laddoo’s.See that you don’t skip it))

- Add cardamom powder or elaichi powder.
- Now mix everything evenly.

- Let the boondi along with all ingredients soak in the sugar syrup for 7-8 hours.

- Once nicely soaked take about 1 cup of the laddoo mix and grind it into a mixer jar coarsely.
- Add this grinded mixture to the laddoo mix.
- This is done because grinded mixture helps in binding the laddoos nicely.

- Now again mix everything properly and start binding the laddoos.
- Shape the laddoos in nice round shape.

- Your Boondi Laddoos are ready.
