Tiffin Sambhar (Hotel Style) | Sambhar Recipe is one of the most comforting & healthy traditional South Indian side dish.It is a popular & tasty South Indian Vegetable Stew or Vegetable Curry made by simmering lentils and assorted vegetables and a spice powder called sambhar powder along with tamrind extract.

Which Sambhar Powder can be used
You can use readymade sambhar powder instead of homemade sambhar powder.
What tastes best with Sambhar  
The tiffin sambhar is served with idli.It is also served with dosa,uttapam,upma,pongal,steamed rice and medu wada.
What kind of Vegetables can be used for making Tiffin Sambhar
Vegetables like red pumpkin,potatoes,drumsticks,,brinjals,carrots and onions can be added in it.These vege’s add a lot of flavour to the sambhar.There is no fixed set of vege’s to be added,you may opt for your favourite vegetables..
What type of Lentils or Dal should be used
I have used arhar dal or tuvar dal (pigeon pea lentils).It can be prepare by using moong dal and masoor dal (spilt red lentils) also.

Tiffin Sambhar (Hotel Style) | Sambhar Recipe

Ingredients
  

  • ¾ cup Toor dal / Arhar dal / तूर डाळ
  • ½ tsp haldi / turmeric powder
  • 1-2 tsp red chilli powder
  • 2-3 tsp sambhar powder
  • Pinch of hing / asafoetida
  • ½ tsp mustard seeds / मोहरी
  • ½ tsp jeera / जीरा
  • 1-2 tsp tamrind pulp / चिंचेचा कोळ
  • To adjust taste Jaggery / गुळ
  • For tempering Curry leaves
  • ½ cup diced red pumpkin / डांगर
  • ½ cup diced brinjal / वांगे
  • 1-2 drumsticks / शेवगा
  • 1 medium sized sliced onion / कांदा
  • For garnishing Chopped coriander
  • To taste Salt

Instructions
 

  • First wash the toor dal 2-3 times.
  • Pressure cook the dal in a cooker for 4-5 whistles
  • Chop and dice the pumpkin,brinjals and drum sticks.• Cook them in a bowl till they turn tender.
  • Once the dal is pressure cooked,mix it nicely so it turns in a smooth consistency.
  • In a pan add oil for tempering.
  • Add jeera,mustard seeds, curry leaves & hing to the oil.
  • Now add sliced onions & cook till it turns pinkish in colour.
  • Add the haldi,chilli powder and sambhar powder & mix well.
  • Next add cooked dal and cooked vegetables to it.
  • Mix well.
  • Add tamrind pulp and jaggery.
  • Add salt as per your taste.
  • Mix and add the water to adjust the consistency.
  • Boil the mix to 5-8 minutes.
  • Garnish with fresh chopped coriander leaves.
  • Your tasty Tiffin Sambhar is ready.
  • Serve this piping hot sambhar with Idli or Medu Wada’s….
