Basundi Recipe | Instant Basundi Recipe is a traditional & popular milk based Indian dessert made by thickening the milk.

About Traditional Basundi

It is a popular milk based dessert from western It is a calorie rich,high energy sweetened condensed milk prepared by simmering full fat milk on low heat till it is reduced to half.Here when it is reduced it gets a slightly thicker consistency.It is flavoured with cardamom,dry fruits and saffron strands.Also milk masala or dudh masala powder is added for flavouring.

Heavy cream can be added during the boiling process to thickening process.Once the milk gets reduced,sugar,cardamom,charoli,dryfruits and saffron strands are added.sometimes after adding sugar a basundi gets a nice pink color,as sugar is also cooked in milk turning into light caramel.Stirring well prevents malai from being formed on top.

Instant Basundi

In this recipe we are preparing the instant version of basundi.This is ideal recipe for those who want this sweet dessert in less time.You can make instant basundi in 20-30 minutes.

In this method sweetened condensed milk is pressure cooked and is then added to the milk.This condensed milk helps the milk to get thickened quickly without disturbing the original flavour of basundi. Addition of condensed milk gives a nice flavour and richness to basundi.

Also you may not need to add extra sugar as the condensed milk has already sugar in it.But if still you need more sweetness then add extra sugar as per your taste of sweetness.

Rest add dry fruits,charoli, saffron strands and cardamom powder as required for flavouring.

Many a times for making instant basundi fresh khoya or peda’s can be added to milk.Due the addition the milk get slightly thickened.

Servings

It taste best when served chill and garnished with sliced almonds and pistachios.It is often served with puri’s.

Basundi is a perishable item so need to be consumed with in 2-3 days from preparation.However it will last in the fridge for about 3—4 days when stored in airtight container.

Ingredients :

  • 1 litre Full Fat Milk
  • 400 gm Condensed Milk
  • Sugar as required
  • 2 tbsp Chironji/Charoli
  • Sliced Dry fruits as required
  • 1-2 tsp Cardamom Powder
  • Few Saffron Strands/Kesar
  • 2 tbsp Milk Masala

Method :

Step by step method of preparing Basundi Recipe | Instant Basundi Recipe :

  • First pour the condensed milk or milkmaid into a bowl.
  • Now pressure cook this condensed milk to 6-7 whistles so that the condensed milk gets cooked.
  • Also by pressure cooking the condensed milk basundi gets a nice color.
  • Sideby keep the full fat milk to simmer.
  • We don’t have to reduce the milk quantity.
  • Once the condensed milk is pressure cooked,mix it properly with the spoon.If needed add little milk to dilute it.
  • Now pour this condensed milk into the full fat milk.
  • Keep on mixing so that both gets mixed evenly.
  • If needed add the sugar or else skip it.
  • Next add the milk masala powder.
  • Add the charoli’s & dryfruits to the milk.
  • Add cardamom powder for flavouring.
  • Mix well.
  • Add saffron strands or kesar.
  • Simmer the milk for next 5-10 minutes.
  • Your Instant Basundi is ready to serve.
  • Serve it with hot puri’s.
