
Palak Puri | Spinach Puri | Palakachi Puri are the extremely popular whole wheat deep fried Indian breads with the goodness of spinach.These deep fried spinach puri pairs well with all sorts of Indian curries like Aloo ki Sabji,Chole or with a side of curd and pickle.
These puri’s are made on festivals,in marraiges and also as a teatime snack when we want something special to eat on weekends.This is also a good option for lunch box.You can carry it for long travel or picnic as they stay fresh for longer period.
To make this spinach puri’s first wash the palak or spinach nicely.Then blanch it and then make a fine puree out of it without adding water.This palak puree gives that bright green colour to the puri’s when used to knead the dough.

Palak Puri | Spinach Puri | Palakachi Puri

Ingredients :
- 1 cup Spinach / Palak Puree
- 2 cups Wheat flour
- ½ cup Bajra flour
- ¼ cup Besan
- 1 cup Curd / Dahi
- 8-10 green chillies
- 7-8 Garlic cloves
- 1 tsp Jeera
- 1 tsp Carom seeds/ova
- ¼ tsp Hing
- ½ tsp Turmeric / Haldi
- Salt to taste
- Oil for frying
- Water for kneeding

Method :
- Rinse the spinach or palak nicely.
- Then keep water for heating in a pan.
- When the water starts boiling,immerse the spinach leaves into the hot water and blanch the leaves for 1-2 minutes.
- After this remove the leaves from hot water & immerse in cold water for 1-2 minutes.
- By doing this we can retain the green colour of the spinach.
- Next remove the leaves from the cold water into a strainer & let the excess water drain out.
- Next transfer the blanched spinach leaves to the mixer jar.
- Blend the leaves into a fine paste.
- See that you don’t add water while blending.
- Your fine palak or spinach puree is ready.
- Next into a mixer jar add green chillies,garlic,jeera & carom seeds.
- Grind everything to a fine paste.
- Now into a bowl add the spinach puree,curd,grinded chilli-garlic paste,hing,haldi & salt.
- Mix everything well.
- Now to the above mixture add besan,bajra & wheat flour.
- Mix everything well and knead a semi-soft dough.
- Add water if required.
- Oil the dough nicely.
- Cover this dough for few minutes.
- Now divide the dough into equal sized balls to roll the puri’s.
- Now roll medium sized puri’s out from this dough.
- Keep the puri’s a bit thick.(Don’t roll the puri’s too thin,they may not get fluffy and also become hard.)
- Meanwhile heat the oil in the kadhai or pan.
- Once oil gets heated up add the puri’s to it.
- Fry them on medium flame till they gets nice and fluffy.
- Fry till the oil stops sizzling.
- If you fry them till it turns golden then the puri will not appear green in colour.
- Remove them into the plate.
- Your healthy and nutritious Palak Puri’s or Spinach Puri’s are ready.
- Serve them hot with bowl of curd or pickle or with Spicy Aloo Ki Sabji or as per your choice.
