
Dhaba Style Dry Aloo Gobi is a spicy and flavour packed cauliflower and potato dish which is a popular vegetarian side dish served in every part of India.
This is a dhaba style version of the dish which comes in dry form.A popular flavourful dish which is widely served in almost every roadside dhaba’s which are the roadside eateries in India with an open air sitting arrangements.
When talking about dhabas’s it takes me to my childhood memories when we used to go on long travel with my father on his official tours.
These dhaba’s always served the traditional food in their unique dhaba style way…the roadside eating feel during the late night travellings are really missed now.I still remember that these dhaba’s were located on the roadsides of the highways and we always enjoyed them…the sound of open cooking and the fresh aroma’s of the tadka’s and the tandoor’s…..so many memories…
So coming to the recipe,this dry aloo gobi was our favourite one and was a must on menu along with the dal tadka,kofta curry,paneer masala and many more incredible and delicious dhaba style dishes.
Here the dhaba style dry aloo gobi is made by frying the potatoes aka aloo and gobi aka cauliflower in oil and then added to a simple but flavourful onion tomato masala.It tastes awesome with roti or chapatti.

Dhaba style Dry Aloo Gobi | Aloo Gobi Fry

INGREDIENTS :
- 250 gms cauliflour/phool gobi
- 250 gms potatoes/aloo
- 1 big sliced onion
- 1 big sliced tomato
- 1 tbsp ginger-garlic paste
- Freshly chopped coriander
- 1-2 tsp red chilli powder
- 1 tsp garam masala
- 1 tsp coriander powder/dhana powder
- ½ tsp turmeric powder/haldi
- 1 tsp dried kasuri methi
- 1 tsp cumin seeds/jeera
- Salt to taste
- Oil for cooking & frying

METHOD :
- First wash the cauliflower and then slice into medium sized florets.
- Soak them in turmeric and salt water for 15 minutes to remove the hidden worms iside the florets.
- After this again wash the florets and dry them with the help of kitchen towel.
- Next peel the potato and make medium thick slices.
- Now heat enough oil in a kadhai or pan to deep fry the cauliflower florets and sliced potatoes.
- First deep fry the potaoes till they turn light golden brown.
- Next deep fry the cauliflower till they turn golden brown colour.
- Drain both on paper napkin to remove the excess of oil.
- Now take a 2-3 tbsp of oil in a pan.
- Add the cumin seeds and once they start cracking add the sliced onions.
- Cook them till they turn golden brown.
- Next add ginger garlic paste.
- Saute till them.
- Now add the chilli powder,haldi,coriander powder and garam masala.
- Mix everything well.
- Add the sliced tomatoes now so that they don’t get mushy.
- Add the fried cauliflower florets and potatoes and give a nice mix.
- Now add salt as per taste.
- Add kasuri methi powder.
- Add freshly chopped coriander leaves and give a nice mix.
- Give a nice mix.
- Cover with the lid and let it cook for next 5-10 minutes.
- Your Dhaba style dry Aloo Gobi is ready to serve.
- Serve it hot with roti or chapati.

Step by step method of preparing Dhaba style Dry Aloo Gobi | Aloo Gobi Fry :
