Kadakani | Devicha Fulora | Navratri Special Recipe are the light and crisp puri’s that are made on Saptami or Ashtami i.e seventh or eighth day of Navratri.This is the authentic preparation prepared for goddess in Navratri.

This tradition is followed in almost many maharshtrian homes.My home too have it on Ashtami.So this preparation is finished the day before Ashtami.

This kadaknya are prepared from maida i.e all purpose flour and rava i.e semolina.It can be prepared from wheat flour also.Every one has their unique tradition of making them.I prefer maida and rava.

The recipe is very simple.You just have to soak maida,rava,little powdered sugar and the smoky hot oil with the help of water or milk.And then roll out the thin round puri’s called kadaknya.The smoky hot oil play’s an important role of making these kadaknya crisp and flaky.

KADAKANI | DEVICHA FULORA | कडाकण्या | देवीचा फुलोरा | NAVRATRI SPECIAL RECIPE

INGREDIENTS :

  • 1 cup maida (all purpose flour)
  • ½ cup rava (semolina)
  • 2 tbsp powdered sugar
  • 2 tbsp smoky hot oil or ghee(कडकडीत तापवलेले तेल/तूप)
  • Small quantity of turmeric or haldi
  • ¼ tsp elaichi powder
  • Salt to taste (optional)
  • Water for kneeding(as required)

METHOD :

Preparation Of Dough For Kadaknya
  • First take a bowl and add the powdered sugar.
  • Add about ¼ cup of water to it.
  • Dissolve the sugar in the water.
  • Your sugar syrup is ready,keep it aside.
  • Now in a bowl or plate take maida.
  • To it add the rava.
  • Next add a bit of haldi powder.
  • Add elaichi powder.
  • Add salt as per taste…its totally optional to add salt.
  • Give everything a nice mix.
  • Now add smoky hot oil to the mixture.
  • Mix everything with the help of palms so that oil gets coated with the flour.
  • Now add the earlier prepared sugar syrup to the mix in batches.
  • Kneed it.
  • Add extra water if required.
  • The dough should be bit hard than we knead the dough for roti’s.
  • Cover this kneaded dough and cover it with plate or damp cloth for 20-30 minutes so that the rava added is nicely soaked.
  • Once soaking process is done knead the dough again.
Making Of Kadaknya | Devicha Fulora
  • Now divide the dough into equal sized balls to roll the puri’s.
  • Now roll medium sized puri’s out from this dough.
  • Roll them quite thin as these puri’s are crisp and flacky.
  • Pirk the rolled puri’s in the centre because we have to thread this puri’s.
  • Also pirk all over the puri.
  • We don’t want the puri to get puffed up.
  • Pirking process prevent the puffing of puri’s.
  • Meanwhile heat the oil in the kadhai or pan.
  • Once oil gets heated up add the puri’s to it.
  • Fry them on medium flame.
  • Fry till they become crisp.
  • Remove them into the plate.
  • Your kadaknya are ready.
  • Let them cool down.
  • Now take a thread and put the puri’s through the hole we had pirked at the centre.
  • You can thread 5,11,21 puri’s its totally optional..
  • These threaded kadaknya or crisp puri’s are ready for offerings.
  • Happy Navaratri.

RECIPE NOTES :

  • Addition of sugar is also optional,but it gives more taste to the puri’s.
  • Adding sugar powdered to water prior helps the sugar to get mixed uniformly.
  • These puri’s can be prepared from only wheat flour or only maida or mix of wheat flour+rava….its totally optional..
  • You can soak them in milk instead of water
  • Addition of haldi is totally optional.
  • Pirking is necessary because we don’t want the puri’s to get puffed up or fluffy.
  • These are to be rolled thin or else they wont become crispier.
