Dal Tadka is a popular dish served in all Indian restaurants.A very delicious dish that can be easily prepared in our home.
I am personally a great fan of dal tadka.

I had tried dal tadka many times but it always did not gave the exact taste which we had in restaurant. I had gone through many recipes on google and tried them many a times. But the exact texture to the dal which we get in restaurant style dal tadka always failed.So I thought of mixing chana dal to toor(adhar) dal because chana dal gives that thick consistency or texture which we don’t get from toor (arhar) dal.And yes, that was a success for me,the dal tadka really tasted like restaurant.Many a times masoor dal or moong dal are added with the toor dal.But the result which we get from chana dal are the best.

The proportion of adding chana dal to toor dal is 1:4 i.e, if you take one cup of toor dal then add ¼ cup of chana dal while you pressure cook them.Many times we add turmeric powder while pressure cooking the dals.I prefer adding the turmeric powder while seasoning. It’s totally optional for you when to add the turmeric. I prefer cooking this dal in ghee,but you can cook it in your regular cooking oil also.The result of cooking in ghee gives a very nice taste to the dal tadka.I prefer adding coarsely grinded onion and tomato paste.You can prefer adding finely chopped onions and tomatos…..Also the slitted green chillies are added.

The main attraction of this dish is the tadka…this is the one which gives the unique taste to the dish.It is the ghee used to give the tadka which is tempered with crushed garlic,red chillies,hing and last the red chilli powder.This tadka is immediately poured on the tempered dal and the dal is covered for few minutes so that the tadka flavours the dal.

INGREDIENTS :

  • 1 cup toor dal (split pigeon peas)
  • ¼ cup chana dal (split chickpeas)
  • 1 medium sized onion grinded coarsely
  • 1 medium sized tomato grinded coarsely
  • 4-5 green chillies slited lengthwise
  • 1 tsp turmeric powder
  • 1 tsp mustard seeds
  • ½ tsp jeera
  • Chopped coriander
  • Salt to taste
  • Oil or Ghee for cooking

For Tadka :

  • 3-4 tbsp Ghee
  • 7-8 garlic crushed and chopped
  • 1 tsp red chilli powder
  • 4-5 whole red chillies(I have used kashmiri mirch here)
  • ¼ tsp hing

METHOD :

  • First wash the toor dal and chana dal.
  • Pressure cook the dals to 4-5 whistles or until cooked properly.(chana dal needs more time to cook than toor dal)
  • In a pan add ghee or oil.
  • Once the oil/ghee gets heated add jeera and mustard seeds.

  • Next add coarsely grinded onion paste to the pan.
  • Add slited green chillies and give it a nice mix.
  • Once the onion changes the colour add tomato paste and mix.
  • Add turmeric powder.
  • Add salt to taste.

  • Now add the pressure cooked dals to the masala mix.
  • Mix everything nicely.
  • Add required amount of water.
  • The consistency of dal should be semi thick i.e not too thick not too flowy (it should be just like it is served in restaurants)

  • Add chopped coriander leaves
  • Again mix well.
  • Let the dal boil for next few minutes.
  • Your dal is now ready for tadka.
  • Put off the flame and prepare for tadka.

For Tadka :

  • In a tadka pan add generous amount of ghee.
  • Let the ghee get heated up.
  • Add the hing.
  • Add the finely crushed garlic to the ghee.
  • Add whole red chillies.(you can break them into two piece)
  • Once the garlic starts changing colour immediately add red chilli powder.
  • Now put off the flame and mix everything well.(be fast so that the red chilli powder do not get burnt)

  • Quickly pour the tadka over the cooked dal.
  • Now cover the dal with the lid so that the tadka aroma gets infused into the dal.
  • After 5-8 minutes open the lid.
  • Your restaurant style dal tadka is ready.
  • Serve it with hot rotis and jeera rice.

RECIPE NOTES :

  • You may use any combination of lentils to make dal tadka.Most commonly used combinations are toor dal+moong dal+masoor dal or toor dal+masoor dal and sometimes with toor dal only.
  • Can use oil instead of ghee.
  • Can use finely chopped onions and tomatoes instead of paste.
  • When using chana dal see that it takes more time than toor dal for cooking.
  • The consistency of dal should neither be thick nor thin.It tastes great when prepared in slightly thick consistency.
