
Thandai Masala Powder Recipe | Homemade Thandai Masala is a traditional spice powder which is a perfect combination of nuts and spices and hence can be used to make variety of different desserts or drinks.The word “Thandai” means cooling or cool.This can be used in various recipes.This powder helps to keep the body cool.
It is widely used to make a special cold drink “Thandai” generally associated with the Indian festivals like Holi & Mahashivratri.It is widely prepared in north India.
This thandai masala powder is prepared with a mixture of almonds,cashew-nuts,pistachios,poppy seeds,fennel seeds,watermelon seeds,dry rose petals,pepper corns,cardamom pods,saffron and nutmeg powder.
All the ingredients used while making this powder are healthy,natural and are easily available.Also no artificial colours or preservatives are added while preparing this powder.

INGREDIENTS :
- ¼ cup cashew nuts(काजू)
- ¼ cup almonds(बदाम)
- 2 tbsp pistachios(पिस्ते)
- 2 tbsp melon seeds(मगज)
- 1 tbsb poppy seeds(खसखस)
- 1 tbsp fennel seeds(सौंफ)
- ¼ tsp pepper corns(मिरे)
- 4-5 green cardamom pods(विलायची)
- ¼ tsp nutmeg powder(जायफळ)
- 1 tbsp dry rose petals(सुक्या गुलाबाच्या पाकळ्या)
- ¼ tsp saffron strands(केसर)

METHOD :
- Dry roast cashew nuts,almonds,pistachios,melon seeds on medium flame just to remove the rawness.
- Also dry roast poppy seeds,fennel seeds and pepper corns on medium flame.
- Now remove everything in a plate and let it get cool down.
- Now in a mixer grinder first add roasted poppy seeds,fennel seeds and pepper corns,seeds from cardamom pods,nutmeg powder,rose petals and saffron strands.
- Grind them to a fine powder.
- Remove it in a plate.
- In the same grinder add cooled dry roasted cashew nuts,almonds,pistachios and melon seeds.
- Now sieve both the grinded mixtures so that no lumps remain back and also everything gets mixed properly.
- Your Thandai Masala Powder is ready.

RECIPE NOTE :
- Traditionally we soak the dry fruits overnight and then grind them to a fine paste next morning and then mix it with the milk.
- The procedure is same but in the instant way we use powder instead of soaking overnight.
- For a superfine texture sieve the powder.
- The amount of spices used in thandai masala can be varied as per your choice.
- Don’t grind the dry fruits continuously for more time or else they would release their oil.
- Store the Thandai masala powder in an airtight container and refrigerate.it will last for 2-3 months.
