GULAB JAMUN RECIPE | KHOYA GULAB JAMUN | MEET THE TASTE

Gulab jamun is a popular Indian sweet that is prepared from milk solids traditionally khoya or mawa. Where khoya or mawa is dried evaporated milk solids which is obtained by continuously cooking the milk on a low flame for hours and then reduced to the consistency of a soft dough..

There are many variations in making of gulab jamuns like they can be made from milk powder,sweet potatoes,paneer,bread,potatoes.But the authentic Gulab Jamuns are prepared from khoya or mawa only.And this have that unique and rich taste which we don’t get from others.

It is a favourite dessert often eaten and prepared at festivals,birthdays or major celebrations such as weddings,parties.

Here in this recipe I have bought the fresh khoya from my local market.This khoya is kneaded into a dough with small amount of flour(maida),and then shaped into small balls and then deep fried in oil at low temperature till they turn golden brown color.If this ball are cooked quickly they remain raw (कच्चे).

These fried balls are then soaked in a simmering light sugar syrup which is flavoured with green cardamom powder and saffron.Also rose water or kewra water is added as per your choice for adding extra flavour.

I am preparing the gulab jamun in the style which my mother used to make.I have mixed the fresh khoya with maida and then prepared the gulab jamuns.If you want to prepare the gulab jamuns for fasting then instead of maida add arrowroot powder to the khoya.

I have fried them in regular vegetable oil.But if you want to prepare it traditionally then you can fry them in ghee.

Also while preparing the sugar syrup I have added just the green cardamom powder.You can add rose water when the sugar syrup get cool down.

INGREDIENTS :

for making gulab jamun balls

  • 500 gm khoya/khawa/mawa
  • 1 cup maida/all purpose flour (addition of maida depand on the moisture content in the khoya.If the khoya is more moist then you may add more maida to it)
  • Oil for frying

for making sugar syrup

  • 2 ½ cup / 500gm sugar
  • 2 ½ cup water (same as the quantity of sugar)
  • Cardamom powder for flavouring
  • Rose syrup (optional)

METHOD :

for making gulab jamun balls

  • In bowl or plate add the khoya.
  • With the help of your palms kneed the khoya to smooth consistency.
  • See that no lumps remain in the kneeded khoya.
  • Now add maida and cardamom powder to the kneeded khoya.
  • Mix both of them nicely till a smooth dough is formed.
  • Now make small balls from the kneeded dough of equal size.
  • Cover and Keep them in a plate.

for making sugar syrup

  • Now in a pan add sugar.
  • To it add equal amount of water.
  • Let the sugar dissolve into the water.
  • Heat it till the sugar solution becomes sticky.
  • Put off the gas before the syrup reaches a one thread consistency.
  • Your sugar syrup is ready.
  • Add cardamom powder to the sugar syrup.
  • Give it a nice mix.
  • Your sugar syrup for soaking the fried gulab jamuns is ready.

for frying gulab jamun

  • Meanwhile keep oil for heating on medium flame.
  • Once the oil gets heated put the prepared balls into the oil.
  • Deep fry them on low flame.(do not fry them on high flame because they remain raw from inside)
  • Fry them till they turn golden brown in color.
  • Remove them into the plate.

for soaking gulab jamun

  • Now put the fried hot golden gulab jamuns in the hot sugar syrup.
  • Soak this gulab jamuns till they absorb the syrup and become soft from inside.
  • Once soaked nicely in sugar syrup your delicious Gulab Jamuns are ready to serve.
