LAUKI KOFTA | DOODHI KOFTA RECIPE

Lauki Kofta or Doodhi Kofta a one more delicious and mouthwatering dish made from the bottle gourd and the semithick gravy base of onions and tomato paste.

I was bit confused for first time about the taste of this kofte’s……. as my mother used to prepare the Malai Kofta’s which really tasted fab.So I thought of trying to prepare this doodhi kofte for once…and to be really true it tasted so fab that my daughters who use to make faces for eating bottle gourd too felt in love with it.

The procedure is very simple.Here I have just grated the lauki/bottle gourd.Squeezed the water from it and then add the besan and the seasonings mentioned below in the recipe..Just deep fried this dumplings which we call as kofte till golden brown.I had made a gravy base in another pan and added a very magical ingredient to the gravy for a very smooth texture and that was fresh cream.Yes this fresh cream not only gave texture to the gravy but also enhanced the rich taste to it.And then just dropped these fried kofte’s into the gravy and let it cooked.

Bottle Gourd have incredible health benefits. It is rich in dietry fibres.It helps in curing constipation.It is high in sodium and potassium,vitamin C and calcium.It helps to lower your bad cholesterol levels and also beneficial for diabetic patients.

So its really essential for us to have this in our diet in one or the other form.I always try preparing different dishes from bottle gourd so that my kids really consume them with taste.

INGREDIENTS :

For Making Kofta :

  • 1 cup grated lauki/doodhi
  • ¾ cup besan/gram flour
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp carom seeds/ova/ajjwain
  • 2 tsp ginger garlic paste
  • Chopped coriander
  • Salt to taste

For Making Gravy :

  • 2-3 medium sized onion paste
  • 2 medium sized tomato paste
  • 2-3 tbsp ginger garlic paste
  • ¼ cup fresh cream
  • 1 tsp red chilli powder (adjust as per your taste)
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • 1 tsp kasuri methi
  • 1 tsp coriander powder
  • ½ tsp cumin/jeera
  • ½ tsp mustard seeds/mohri
  • ½ tsp sugar (optional)
  • Salt to taste
  • Chopped coriander leaves for garnishing
  • 2-3 tbsp oil for cooking
  • Water for cooking



METHOD :

MAKING OF KOFTA’S :

  • Wash the doodhi first.
  • Peel of the skin from the doodhi.
  • Now with the help of grater grate the doodhi.
  • In a bowl place a cotton cloth.
  • Put the grated doodhi into cloth and now squeeze it and remove the excess of water from it.
  • Reserve the squeezed water for further cooking.
  • In a bowl add the grated doodhi,besan,chilli powder,turmeric,carom seeds,ginger-garlic paste,chopped coriander and salt as per your taste.
  • Mix everything well.
  • No need of adding extra water.
  • If you find the mixture too loose then you may add extra besan to it.
  • Your kofta batter is ready.
  • In another kadhai add oil for frying the kofte’s.
  • Once the oil gets heated up pour the kofta batter with the help of spoon or hands into the oil.
  • Stir them till it turns golden brown.
  • Now remove them into a plate and keep aside.


MAKING OF GRAVY :

  • In a pan add oil for cooking.
  • Add the onion paste to it.
  • Stir till it turns golden brown.
  • Now add the ginger-garlic paste.
  • Mix it well.
  • Add the tomato puree to the pan and mix it well.
  • Add red chilli powder,turmeric,garam masala,coriander powder and garam masala.
  • Give it a nice mix.
  • Now add salt to taste.
  • Also you can add ½ tsp of sugar to balance the tangy taste of tomatoes.But its totally optional.
  • Mix everything properly.
  • Add the fresh cream to the mixture.
  • Stir it nicely.
  • Now add the crushed kasuri methi.
  • Again mix well till the mixture releases oil.
  • Now pour the water to it.
  • The consistency of the gravy should not be too flowy.
  • Once the gravy starts boiling pour the fried kofte into it.
  • Cook the kofte’s for next 10 minutes or till kofte’s becomes soft.
  • Now garnish it with chopped coriander leaves.
  • Your Lauki/Doodhi kofta curry is ready.
  • Serve it hot with Roti’s or Rice.
