This cake belongs to one of my mother’s recipe..It was the first cake prepared by my mother when she had done her Baking classes.Unlike today in 90’s there was no Youtube video’s or Google to just peep and learn the cooking.So many of them did the cooking classes to learn so.This version of cake is with Egg…and you can add any flavour you want..and the result is really fab.Here I am making the Marble Cake..In this cake you get very beautiful swirls that we see on the marble stones..hence may be the name marble cake.You can try with different colours to get the different types of swirls.Here I am using Coco powder for that choclatey flavour.The base is white as usual..by pouring coco powder to the batter we get the very nice dark brown layers…The very basic and important thing about the making of cake I had learnt from my mother was that,

  • The ingredients you take for cake preparation should be measured perfectly.
  • The butter used should be at room temperature.
  • The egg whites and egg yolks should be beaten separately.This gives a nice texture and softness to the cake.
  • When you beat the cake batter it should be done in one direction only.
  • The best sign to know that your cake is done is that the cake batter looks like tearing when you beat it.
  • This is the time when it is ready to bake.
  • Preheating of oven is also important before keeping the cake for baking.

INGREDIENTS :

  • 1 ½ cup maida / all purpose flour
  • 1 cup butter ( at room temperature )
  • 1 cup powdered sugar
  • 3 eggs
  • 1 tsp baking powder
  • 2 tbsp Coco powder
  • ¼ tsp vanilla insence



METHOD :

  • First sieve the maida and baking powder 2-3 times nicely.
  • Next grease the baking tray with butter and then dust the maida all over the tray.
  • Keep this tray aside.
  • Now in a bowl add 3 eggs.
  • Beat this egg with the beater till the eggs becomes fluffy.( If you don’t have beater you can beat it with hand whisker.)
  • Keep the beated eggs aside.
  • Into another bowl add butter and powdered sugar.
  • Beat this both till the butter and sugar gets mixed properly.
  • Add vanilla insence to the mixture.
  • Beat till the mixture gets smooth and fluffy.
  • Now into this mixture add the beated egg mix.
  • Again beat both the mixture nicely.
  • Now add the sieved maida and baking powder mix in batches to the above beaten mixture.
  • Mix the mixture by cut and fold method slowly.
  • Your cake batter is ready now.
  • Meanwhile Preheat the oven to 180 degrees for 5-10 minutes.
  • Now take half cake batter in another bowl.
  • Into this batter add coco powder.
  • Mix it well.
  • Now into the greased cake tray add the some parts plain batter first.
  • Spread it with the help of spoon.
  • Tap it nicely.
  • Now add the coco powder mixed batter over the plain batter.
  • Do not spread the coco powder mixed batter.
  • Now add the plain cake batter again over the coco powder mixed batter.
  • Again pour the remaining coco powder mixed batter.
  • Tap the cake tray nicely so that the batter gets settled down nicely.
  • Now move slowly the tip of the knife in zig-zag motion over the cake batter.
  • This is done to bring that marble effect to the cake after baking.
  • Now immediately keep the baking tray into the oven.
  • Bake the cake at 180 degrees for next 40-45 minutes in the preheated oven.
  • After 40-45 minutes remove the tray and let it get cooler for next 10 minutes.( I had kept this cake for 42 minutes for baking.This time of baking varies with the type of oven models.)
  • Now turn the tray upside down on a plate and tap the tray from bottom to remove the cake.
  • Your soft and spongy Marble Cake is ready.
  • Garnish this cake by dusting powdered sugar on it and placing cheeries over it.
