In hot Summer’s everyone needs something cool to get rid of the heat strokes.Here we are going to prepare the basic version of Vanilla icecream.This recipe contains just five ingredients i.e.full fat milk(here I have used buffalo milk),fresh cream (I hav used amull fresh cream) ,powdered sugar,corn starch/flour and vanilla inscence.

In this recipe we have to whip the fresh cream.I have whipped it with the help of hand blender.But if this hand blender’s are not available then you can whip the cream in your mixer jar slowly…the care is to be taken that we don’t have to whip it too much or else it can get churned into butter.

By preparing icecream by this method a soft and smooth icecream is formed.Also here you can use fresh cream available in the market (I hav used Amul fresh cream ) .The cream should be nicely freezed or else it will be difficult to form the proper whipped cream.

I have used powdered sugar…you can use whole sugar also.The quantity of sugar added depands on your taste.

The corn starch/flour used helps in giving a smooth texture and consistency to the icecream.Also if you are on fast then you can use arrowroot powder instead of corn flour.The quantity of arrowroot powder will be same as that of corn flour.

Last I have used the vanilla incense that gives that vanilla flavour to the icecream.

By using different types of incense’s,colour’s and different types of fruit pulps you can prepare different flavours of icecream’s by keeping the same ingredients we have used while preparing this icecream.

The different types of icecream that can be prepared are,

  • Mango Icecream
  • Rose Icecream
  • Chocolate Icecream

INGREDIENTS :

  • ½ litre of full fat milk/buffalo milk
  • 1 cup of fresh cream ( I hav used Amul fresh cream )
  • ¾ to 1 cup of powdered sugar ( depands on your taste )
  • 2 tbsp corn flour/starch
  • 3-4 tsp vanilla incense

METHOD :

  • Take full fat milk in a pan and keep ¼ cup of milk from it aside.
  • Heat the milk.
  • Add powdered sugar to the milk.
  • Dissolve the sugar properly into the milk.
  • Now take the corn flour in another bowl.
  • Add the ¼ cup milk kept aside to the corn flour powder.
  • Stir both of them properly.
  • Now add this mixture to the milk.
  • Continuously keep on stirring the milk so that everything gets mixed properly.
  • Cook this on medium flame and keep on stirring till a thick mixture is formed.
  • To check weather the mixture is formed properly or not put the spoon in the milk mixture.If the milk mixture sticks to the bottom of the spoon then your mixture of milk and corn flour is properly cooked.
  • Now add vanilla incense to the mixture and mix properly.
  • Now turn off the gas and let it get completely cooled down.
  • When the mixture of milk gets completely cool down,then add the whipped cream to the mixture.

  • Slowly fold the milk mixture and whipped cream.
  • Mix slowly till everything gets evenly mixed.
  • Now this is your icecream mixture.
  • Pour your icecream mixture into an airtight container.
  • Close the lid of the container and freeze it for 2-3 hours.
  • After 2-3 hours remove the container from the freeze.
  • The mixture here is not fully frozen.
  • You will have to blend the icecream mixture again till all the frozen particles of the icecream mixture becomes more light and fluffy.
  • Now again keep this container into the freezer.
  • Now freeze it for 6-7 hours or till the icecream is done.
  • After 6-7 hours remove the container from the refrigerator.
  • Your Vanilla Icecream is ready.
  • Scoop it out with the help of icecream scooper or with the spoon into a bowl.Serve this soft,smooth and delicious homemade Vanilla Icecream.

 



RECIPE NOTE :
Preparing whipped cream without hand beater :
Now when you don’t have hand beater in your home,this process of whipping can be done with the help of mixer also.

  • For that pour the fresh cream into the mixer jar.
  • Whisk the cream in mixer till smooth paste of cream is formed.
  • After this stop the process and remove this cream in a bowl.
  • This smooth cream paste formed can be used for preparing icecream.
  • This cream won’t be as fluffy as that we made by electric hand beater.
