A very Maharashtrian dish…popular as Harbharyachi Usal or Black Chana Usal.Usals are the integral part of maharashtrian cuisines..and is cooked weekly almost in every kitchen.We have so many types of usals like white peas usal,matkichi usal,hirvya moongachi usal…and many variants as per region..Also the spices in the usal change as per region…

Here I am making my own version.Don’t know how it existed but I often prepare it in my way.Also the usals are generally eaten with pav’s,breads,roti’s or rice,but this usal we eat as a breakfast with no side dish.

HARBHARA USAL | BROWN CHANA USAL | हरभऱ्याची उसळ

INGREDIENTS :

  • 1 cup harbhara/brown chana
  • 2 medium sized chopped onions
  • 1 big tomato chopped
  • 6-7 cloves of garlic
  • ½ inch ginger
  • 1 tsp garam masala
  • ½ tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp sugar
  • Chopped Coriander leaves
  • Curry leaves for tempering
  • Salt to taste
  • Oil for cooking


METHOD :

  • Soak 1 cup of chana overnight.
  • Next morning wash the chana’s and pressure cook them to 3-4 whistles.
  • Before pressure cooking add small amount of salt to the chana.
  • Once the chana gets cooked properly keep them aside.
  • Now in a pan add oil.
  • Once the oil gets heated add mustard seeds and cumin seeds for tempering.
  • Add chopped onions.
  • Saute till they turn golden brown.
  • Add chopped tomatoes.
  • Saute properly.
  • Add ginger garlic paste to the pan.
  • Again give it a nice mix.
  • Add turmeric powder,chilli powder,coriander powder and garam masala to the mixture.
  • Give it a nice mix.
  • Add sugar so as to balance the sour taste of tomatoes.
  • Add salt to taste.(Keep in mind that we had added some salt while cooking the chana’s also.)
  • Give everything a nice mix.
  • Add the boiled chana to the masala mixture.
  • Give it a nice mix.
  • Add chopped coriander leaves.
  • Cook the chana’s for next 10 minutes so that all juices of the masala’s get mixed with the chana.
  • Your Harbharyachi Usal / Chana Usal is ready.
  • Garnish it with chopped onions,tomatoes and coriander and serve hot.



STEP BY STEP METHOD OF PREPARING HARBHARYACHI USAL | BROWN CHANA USAL | हरभऱ्याची उसळ
