Batata Wada Sambhar is one of the popular Maharashtrian snacks food.It is also famous as Potato Bonda Sambhar in South India.In this recipe the tasty,spicy and crispy Batata wada is dipped into the Sambhar and is then eaten.It is one of the favourite snacks and breakfast dish also served in many restaurants.

Here Batata Wada is a popular street side snacks which is nothing but a potato fritter that consists of boiled and smashed potatoes balls spiced with garlic-chilli paste and coriander leaves and curry leaves which are then dipped into the thick chickpea flour batter and then deep fried.

And Sambhar is a South Indian Curry made up of toor dal,in which this batata wada is dipped and eaten.

The process of making this dish is very simple but once when we prepared,tastes fantastic…We always prepare it on weekends atleast once in a month..and all in the family are great fond of this dish..

INGREDIENTS :

For Batata Wada :

  • 5-6 medium sized boiled potatoes
  • 5-6 green chillies(as per your taste)
  • ½ inch ginger
  • 1 tsp turmeric powder
  • Cumin seeds & mustard seeds for tempering
  • Chopped Coriander leaves
  • Curry leaves
  • 1 tbsp oil for cooking
  • Salt to taste



For Batata Wada Batter :

  • 1 cup besan/chickpea flour
  • 1 tsp chilli powder
  • ½ tsp turmeric powder
  • ½ tsp carom seeds
  • ½ tsp cumin seeds
  • Coriander leaves
  • Salt to taste
  • Water as required

METHOD :

For Making Batata Wada :

  • Wash the potatoes first.
  • Pressure cook the potatoes in a pressure cooker for 5-6 whistles.
  • Once pressure cooked,let them get cool down.
  • Peel of the skin from the potatoes.
  • Grate them or smash the potatoes and keep aside.
  • Grind the green chillies,ginger to a fine paste.
  • In a pan add oil.
  • Temper it with cumin and mustard seed.
  • Add chopped curry leaves to the tempering.
  • Then add the chilli-ginger paste.
  • Then add the turmeric powder.
  • Saute everything properly.
  • Add smashed potatoes.
  • Add salt to taste.
  • Also add good amount of chopped coriander leaves.
  • Mix everything properly.
  • Cook for next 5 minutes.
  • Your chutney for batata wada is ready.
  • Now let this potato chutney get cool down.
  • Make small sized balls of this chutney.
  • Keep them aside in a plate.


For Making Batata Wada Batter :

  • In a bowl add the besan.
  • To it add the chilli powder,turmeric powder,cumin seeds,carom seeds and salt to taste.
  • Mix everything properly.
  • Add reguired amount of water to the flour mixture.
  • Give it a nice mix.
  • Keep in mind that the consistency of the batter should be thick.(Because we have to dip the potato balls in it and the batter should coat the balls properly.)
  • Your batter for batata wada is ready.

Making Of Batata Wada :

  • Add oil to the pan/kadhai for frying.
  • Now take the prepared potato balls and besan batter.
  • Dip the potato ball into the besan batter.
  • Slowly insert this dipped ball into the hot oil in the kadhai.
  • Fry this wada’s on medium flame.
  • Fry until they turn light golden brown.
  • Remove the wada’s into the plate.
  • Your Batata Wada is ready.


Assembling of Batata Wada Sambhar :

  • In a plate place Batata wada’s.
  • Pour generous amount of Sambhar on them.
  • Enjoy eating this delicious dish of Batata Wada Sambhar.
