Doodhi Bhoplyachi Kheer or Lauki Ki Kheer is a sweet pudding made out of bottle gourd vegetable.Its very simple to make this kheer for the beginners also.
Only the thing to be kept in mind is that the doodhi/lauki should be tender and not be bitter in taste.Here I have used rice powder in the kheer to give a nice texture to the kheer.If you are preparing it for fast then use the samo rice / bhagar instead our regular rice.And the preparation method remains the same.
I have learnt this method of preparing the kheer from my mother-in-law…and mind once you prepare,it tastes fab…
We can also prepare Doodhi Thalipeeth | Lauki Thalipeeth from doodhi/lauki/bottle gourd.
So lets start with the recipe…
DOODHI BHOPLYACHI KHEER | LAUKI KHEER | दुधीभोपळ्याची खीर

INGREDIENTS :
- 1 cup grated bottle gourd
- ½ cup sugar
- 2-3 tbsp ghee/clarified butter
- 1 tsp cardamom powder
- 2 tbsp roasted and grinded rice flour
- Almonds,cashew nuts,pista and saffron strands for garnishing
- ½ litre of full fat milk or 1 litre of milk reduced to half of the quantity
METHOD :
- First take about 2-3 tbspoon of raw rice.
- Wash the rice nicely.
- In a pan add ½ tsp of ghee.
- Add the rice and saute it till all the water gets drain out of it and the rice gets roasted properly.
- In a mixer grinder grind the rice to a coarse powder.
- Next wash the doodhi/lauki properly.
- Remove the skin from the doodhi/lauki with the slicer.
- Now grate the doodhi.
- Before grating the doodhi add the ghee to the pan.
- Immediately after grating the doodhi add it to the pan.(the doodhi/lauki turns black after grating so we have to be fast)
- Saute it properly.
- Once nicely sauted add the coarsely grinded powder of the rice to the doodhi.
- Mix it well.
- Now add the milk.
- Mix well.
- Add the sugar and give it a nice stir.
- Once the mixture comes to boil add the dry fruits like chopped almond and cashew nuts.
- Add the cardamom powder and stir nicely.
- Let the kheer cook for next 10 minutes.
- If you find the consistency very thick then you can add extra milk.
- The consistency should not be too thick.
- Your Doodhi Bhoplyachi Kheer / Lauki Kheer is ready.
- Garnish it with pista and saffron strands and serve it hot or cold as per your choice.
