How to make restaurant style dal khichdi

How to make restaurant style dal khichdi or Dal khichdi is combination of rice and lentils.Its one of the most nutritious and healthy form of food.A good and easy option for your night meal.It is served in most of the restaurants.

Here I am using tur dal and rice to prepare khichdi.One can use moong dal instead of tur dal for the preparation.Many times it can be prepared from leftover rice and dal.You can add your favourite vegetables to prepare more healthy and nutritious form of khichdi.

INGREDIENTS :

  • 1 cup rice
  • ½ cup tur dal
  • 1 medium sized chopped onion
  • 1 medium sized chopped tomatoes
  • 7-8 garlic cloves
  • Chopped coriander leaves
  • ¼ tsp cumin seeds/jeera
  • ¼ tsp mustard seeds/mohri
  • 1 tsp chilli powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • ½ tsp sambhar masala
  • ½ tsp coriander powder
  • Salt to taste
  • Oil for cooking

For Tempering :

  • 2 tbsp ghee/clarified butter
  • 2-3 red chillies
  • ½ tsp red chilli powder

METHOD :

  • Wash the rice and dal nicely.
  • In a pressure cooker add the washed rice and dal,turmeric powder and salt.
  • Add required amount of water to the dal and rice.
  • Pressure cook for 3-4 whistles.
  • In a pan add oil.
  • Then add the cumin and mustard seeds.
  • Add crushed garlic cloves and saute till it changes its colour.
  • Add chopped onion and fry till it turns golden brown.
  • Next add chopped tomatoes to the pan.
  • Let the tomatoes get nicely cooked.
  • Add chilli powder,garam masala,sambhar masala,coriander powder and turmeric powder to the pan.
  • Mix everything properly.
  • Add salt as per your taste.(keep in mind that we have added salt while cooking the rice and dal also)
  • Saute the mixture till it releases the oil.
  • Now add about 1 glass of water to the mixture.(the dal khichdi recipe is moist in texture.You can adjust the water level as per your requirement.)
  • Bring this masala mixture to a boil.
  • Now add the cooked rice and dal mixture to the pan.
  • Give it a nice mix.
  • Check the consistency of the khichdi.
  • If its too thick then again add the required amount of water to it.
  • Now add chopped corianders to it.
  • Give it a nice stir.
  • Let it cook for next 5-10 minutes.
  • Now in another pan add ghee/clarified butter.
  • To it add the whole red chillies and chilli powder.
  • Saute it nicely.
  • Pour this tempering onto the cooked dal khichdi.
  • Your restaurant style Dal Khichdi is ready to eat.
  • Serve it hot with pure homemade ghee/clarified butter.
