Ragda pattice is a street food which is eaten with great chao.It is a street food most oftenly found in all chaat stall across every parts.
The dish is prepared in two parts; Ragda which is the base of the dish in the form of gravy and Pattice which is the mashed potato cake.It is served in a bowl with Pattice covered with Ragda,chopped onions and coriander,sweet & sour chutney Tamrind Chutney and sev.
So lets start with this mouth-watering recipe of Ragda-Pattice.

INGREDIENTS :
FOR PATTICE :
- 4 cups mashed potatoes or 5-6 medium sized boiled potatoes
- 4-5 bread slice or 2 pav
- ¼ cup rice flour
- 1 medium sized chopped onion
- 5-6 green chillies
- 7-8 garlic cloves
- ½ tsp turmeric powder
- ½ cup chopped coriander leaves
- Salt as per taste.
FOR RAGDA :
- 1 cup White peas (soak overnight & then pressure cook to 5-6 whistles)
- 2 medium sized onions paste
- 2 small tomatoes paste
- 7-8 garlic cloves
- ½ inch ginger
- 2 tsp chilli powder
- ¼ tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp jaggery
- 1 ½ tbsp tamrind pulp
- ¼ tsp baking soda (optional)
- Coriander for garnishing
For Garnishing Ragda-Pattice :
- Tamrind chutney
- Chopped onions
- Chopped coriander leaves
- Chaat masala
- Sev
METHOD :
FOR MAKING PATTICE :
- Boil the potatoes first.
- Once the potatoes get boiled smash the potatoes nicely.
- Next grind the green chillies and garlic to a fine paste.
- Now in a bowl of water dip the bread slices or pav and remove it and squeeze excess water from them.
- Smash the moist slices of bread or pav.
- Now in a bowl mix smashed boil potatoes,smashed slices of bread or pav,rice flour,chopped onion,garlic and chilli paste,turmeric powder ,chopped coriander and salt to taste.
- Mix all the ingredients properly.
- Now oil your palms and take a medium ball sized mixture and press it to the flat round shape of pattice.
- Heat the tava or flat pan and oil the tava\pan and fry the pattice from both the sides evenly.
- Fry the pattice till they become a bit crisp.
- Your pattice is ready now.
FOR MAKING RAGDA :
- Soak the white peas overnight and add the baking soda to the peas while soaking.
- Next day remove the water from the soaked peas and pressure cook the white peas with fresh water.
- While pressure cooking add salt and turmeric powder to the peas.
- Cook the peas to 5-6 whistles.
- Let the peas get cool down.Then smash the peas and keep aside.
- Make a fine paste of onions paste and tomatoe paste.
- Also grind the ginger and garlic to fine paste.
- Add oil to the pan and add the onion paste to it.
- Saute the onion paste till it turns golden brown.
- Next add the tomato paste to the pan and mix the onion and tomato paste properly.
- Add garlic and garlic paste to the pan.
- Saute the mixture till it leaves the oil.
- Now add chilli powder,turmeric powder,coriander powderand garam masala to the mix and saute it nicely.
- Add tamrind pulp and jaggery.
- Now add the smashed white peas to the mixture in the pan.
- Give it a quick mix.
- Add required amount of water to the above mixture and keep the proper consistency.(here I added about 2 full glasses of water)
- The consistency of the ragda mixture should not be too thick.It should be little flowy so that the pattice gets nicely absorbed in it.
- Give it a nice boil and garnish it with chopped coriander.
- Your ragda is ready now.
ASSEMBLY OF RAGDA-PATTICE :
- In a plate first place the pattice.
- Pour generous amount of hot ragda mixture over the pattice.
- Add tamrind chutney.
- Top it with chopped onions and chopped coriander leaves.
- Now sprinkle chaat masala.
- At last top the ragda pattice with generous amount of sev.
- The mouth watering Ragda-Pattice is now fully ready to serve.
RECIPE TIP :
- THE CONSISTENCY OF RAGDA SHOULD NOT BE TOO THICK.
- SEV USED IN THIS RECIPE IS THE NYLON SEV BOUGHT FROM LOCAL SWEET MART.
- ALL TOPPINGS FOR RAGDA PATTICE SHOULD BE KEPT READY IN ADVANCE.
- PREPARE THE CHUTNEY’S IN ADVANCE SO AS TO MAKE THE ASSEMBLY OF RAGDA PATTICE EASY AND QUICK.
