Gajar Halwa | Carrot Halwa | Gajar Ka Halwa is a sweet dessert.This dessert is generally prepared in all households during festive season or any occasion.My children are great fond of this desserts.We mostly prepared it during winters because it is available in abundant during this season.

It is a nutritious food item also a good source of Vitamin C & K and fibres and Vitamin A which are good for eyes,.The milk which we add to the dish is rich in Calcium and Proteins.Also the dry fruits added provides good amount of Proteins to the dish.Atlast it is a energy packed dish which is not only nutritious but also healthy for our body.

Gajar halwa is a combination of just just few ingredients like Carrots,Milk,Sugar,Ghee and Dry fruits and also you can add khoya and condensed milk (its optional in my recipe because I try doing recipes with the things that are easily available in my kitchen.) Actually addition of khoya or condensed milk gives the rich texture and taste to the halwa.But I generally use the full fat milk and reduce it to half quantity.This process also helps in giving same taste and texture that we get from khoya or condensed milk.

INGREDIENTS :

  • 1 kg of fresh carrots (makes about 5-6 cups of grated carrots)
  • 1 litres of full fat milk ( reduced it to half quantity by boiling)
  • 1 ½ -2 cups of regular sugar (as per your taste of sweetness)
  • ¼ cup of ghee
  • ½ cup of sliced and chopped dry fruits (cashew nuts,almonds.pistachio)
  • 1 tsp cardamom powder

METHOD :

  • Firstly keep the milk for boiling.
  • Boil the milk till it is reduced to half quantity.
  • This process of reducing the milk will consume time.
  • Now wash the carrots.
  • Peel the carrots and grate them with hand grater or in your food processor.
  • Add ghee in a thick bottom pan or kadhai.
  • Once the ghee heats up add the grated carrots to it.
  • Give it a nice mix.
  • On heating the carrorts starts changing its colour.
  • Now add the reduced milk to the carrots mixture.
  • Give it a nice mix.
  • Cook the carrots in the milk on low flame.
  • Keep on stirring continuously to avoid sticking of the mixtures to the bottom of the pan.
  • Cook till the milk gets reduced and evapourated.
  • Now its time to add sugar to the mixture.
  • Let the sugar get mixed properly in the mixture.
  • Keep on stirring in between to avoid sticking to the bottom of the pan.
  • Cook on low flame till sugar get nicely mixed.
  • Add the sliced cashew nuts and almonds.
  • atlast add cardamom powder and mix well.
  • Your Gajar Halwa is ready to eat.
  • Serve it hot or cold by garnishing it with sliced pista.

RECIPE TIPS :

  • Always use fresh carrots for making halwa.
  • You can cook it in pressure cooker or microwave oven also.But the best taste will be obtained from cooking in pan or kadhai only.
  • For quick halwa add sugar only when the milk gets evapourated completely.
  • You can add the dry fruits of your choice.
  • Always cook the halwa in low flame.
  • You can use khoya or condensed milk instead of milk.This will reduce your cooking time.
