Besan Dhokla / बेसन ढोकळा

Besan dhokla is generally Gujarati dish prepared from chana-dal flour/besan/बेसन.Its a healthy and nutritious option for tea time snack,tiffin box or breakfast.Its a instant dhokla that can be prepared within few time limit.Here we have prepared it using citric acid.So let’s see to the mouth watering recipe.

There are different type of Dhokla’s which can be prepared in different variations like,

INGREDIENTS :

  • 1-1/2 cup of besan/gram flour(बेसन)
  • 3-4 green chillies (हिरव्या मिरच्या)
  • 1/2 inch of garlic (आलं )
  • 2 tbspoon of sugar (साखर)
  • 3 /4 tspoon of citric acid (लिंबूसत्व )
  • 1/2 tspoon baking soda (सोडा)
  • Salt to taste.

FOR TEMPERING :

  • 2 tbspoon oil
  • 1/4 tspoon of mustard seeds (मोहरी)
  • 1/4 tspoon of cumin seeds (जिरा)
  • Curry leaves (कडीपत्ता)
  • Coriander leaves(कोथिंबीर) for garnishing.

METHOD :

  • Take one and half cup of besan flour.
  • Grind chilli , ginger,citric acid,sugar all together.
  • Add the grinded paste to besan.
  • Add required amount of water
  • to the paste.
  • Consistency of the paste should be like idli-dosa batter.
  • It should not be too flowy.
  • Now whisk the batter in one direction till the batter becomes fluffy.Now add soda to the batter and again whisk ,the batter will now become more light and fluffy.
  • This will be the perfect form of dhokla batter.
  • Now pour the batter to the greased dhokla plates.
  • Put the plates in steamer.
  • Steam the dhokla’s to approximately 10 – 15 minutes.
  • After this remove the plates and let them cool.Now cut the dhokla in square shape.
  • Prepare the tempering.
  • For tempering , in a pan add oil.
  • Warm the oil and to it add mustard seeds,cumin seeds, and curry leaves.
  • Now pour the tempering over the dhokla plates and spread evenly.
  • Garnish with coriander leaves.Your instant dhokla is ready to it.



RECIPE TIP :

  • Boil the water in the steamer first and then keep the dhoklas for steaming.
  • Simple trick to a fluffy dhokla is that beat the batter well. The more you beat the batter; more air is incorporated in the batter, resulting in soft-spongy dhokla’s. Just remember to beat the batter before adding soda.
  • After adding baking soda, don’t let the batter sit for a long while. Steam it right away.
  • Steam for 10-15 minutes only don’t over cook or else the dhokla’s would become hard and dry.


STEP BY STEP METHOD FOR MAKING YELLOW DHOKLA :
