COCONUT COOKIES | EGGLESS COCONUT COOKIES

Coconut Cookies are small,flat,sweet,baked,crispy biscuits.Its main ingredients are flour,powdered sugar and butter or oil or ghee/fat and grated or desiccated coconuts.Its a very simple process of making the cookies only thing to be kept in mind is that the proportion of the ingredients taken should be accurate.Also the baking time should be maintained properly.As if the time of baking increases the cookies would become harder.

Here I hav used the grated coconut that I have done in my home,You can use the desiccated coconut powder from the market also,but then the proportion will be a bit different.

These cookies can be made in different flavours like,

INGREDIENTS :

  • 1 ¼ cup maida/all purpose flour
  • ¾ cup powdered sugar
  • ½ cup melted butter
  • 1 cup homemade grated dry coconut/khobryacha kis (if using desiccated coconut take 100gms)
  • ½ tsp baking powder
  • 1 tsp vanilla inscence
  • A pinch of salt
  • About 1 tbsp or less milk if required.

METHOD :

  • If you are using the homemade grated coconut then grate the coconuts first.
  • Grind the sugar to fine powder.
  • In a bowl add the powdered sugar,salt and melted butter.
  • Mix it nicely.
  • Now add the grated coconut to the mixture and give it a nice mix.
  • Add the maida and baking powder to the mixture and give it a nice mix.
  • With your hand mix everything well.
  • If you find the mixture too dry then only add the milk.
  • If you can make a small balls out of the mixture then there is no need of adding the milk.
  • Now kneed the mixture nicely.
  • Grease the baking tray with the butter first.
  • In your hand take a small proportion of mixture and give it a small ball like shape.
  • Now keep this in your baking tray.
  • In same manner prepare the remaining balls.
  • You can flat it a bit by your palms also but here I haven’t done it.
  • Now preheat your oven for 5 minutes.
  • After 5 minutes keep the tray into the oven.
  • Bake at 180 degrees for 15-20 minutes in your convection oven.(the time may vary according to the models of oven.)
  • After 15-20 minutes remove the tray from the oven and let it get cooler.
  • Your Coconut Cookies are ready to eat.
  • Serve it with tea or coffee or eat it like that only.



NOTE :

  • Use melted butter so that you can save the time of mixing.
  • Milk should be used only if you cannot make the balls from the mixture.
  • If your mixture becomes dry just sprinkle the milk on the mixture.
  • If you add too much of milk the mixture will become too moist and then you will have to add the maida to regain the consistency of the mixture batter.Due to which the crispiness and texture of cookies would be lost.
  • The baking time for cookies may vary for the different models of the oven.
  • For this check after 15 minutes if the cookies have changed its colour or not.


STEP BY STEP METHOD OF PREPARING COCONUT COOKIES | EGGLESS COCONUT COOKIES.



  • If you are using the homemade grated coconut then grate the coconuts first.

  • Mix it nicely.

  • Add vanilla inscence to the mixture.

  • Now add the grated coconut to the mixture.

  • Give it again a nice mix.

  • Add the maida and baking powder to the mixture.

  • With your hand mix everything well.

  • If you find the mixture too dry then only add the milk.(If you can make a small balls out of the mixture then there is no need of adding the milk.)The batter before adding milk is shown below.

  • Now again mix it nicely.The batter after adding milk will look like shown below.This is the perfect consistency of the cookies batter.

  • Now kneed the mixture nicely.

  • Grease the baking tray with the butter first.
  • In your hand take a small proportion of mixture and give it a small ball like shape.

  • Now keep this in your baking tray.

  • In same manner prepare the remaining balls.

  • You can flat it a bit by your palms also but here I haven’t done it.
  • Now preheat your oven for 5 minutes.
  • After 5 minutes keep the tray into the oven.
