Medu vada is generally a south indian dish. Its made of white urad dal and moong dal, where the dals are soaked overnight and next day are grounded to fine paste.This paste of dal is flavoured with spices like green chillies,ginger and shredded coconut pieces.this vada’s are fried in oil and is served with Sambhar and Coconut Chutney. It’s served as a breakfast or as snack.

INGREDIENTS :
- 2 cups White urad dal (split black gram lentils) (पांढरी उडीद डाळ)
- 1/4 cup moong dal
- 1/4 cup of rice flour (तांदळाचे पीठ)
- 6-7 green chillies
- 1/2 inch of ginger (आलं )
- Shredded coconut pieces
- Salt to taste
- Oil for frying
- Water as required.
METHOD :
- Soak the urad dal and moong dal overnight.
- Next day drain the excess of water from the dals.
- Grind the dals to fine paste.See that you use minimum water for grinding the paste.
- The paste should not be too flowy.
- Now to the paste add grinded chilli and ginger paste.
- Add rice flour, shredded coconut pieces,and salt to taste.
- Mix the dal batter evenly.
- Wet the palms.
- Take golf size batter and place over your palm.
- Flatten to round shape and make hole in the center looking like donut.
- Now with other hand wet fingers slowly slide vada into the hot oil.
- Fry the vada on a medium flame so that it gets cook evenly from inside also.
- Fry the vada’s till it turns golden brown.
- Remove it on tissue paper so that excess oil is removed.
- Your Medu vada is ready to eat.
- Serve it with Sambhar and Coconut Chutney.
Recipe Note :
- Consistency of batter of medu vada is very important.
- It should not be too thick nor too flowy.

- Fry the vada on a medium flame so that it gets cook evenly from inside also.
