Rava dhokla is a snack dish.Its generally a gujrati snack item.It can be prepared with variations.Here in this recipe I am using curd and some parts of citric acid to bring that sour and tangy taste.Here in this recipe,citric acid is optional because some people do not like too much of sourness in dhokla’s.If the curd/buttermilk is too sour you can skip the citric acid.
There are different type of Dhokla’s which can be prepared in different variations like,
- Khaman
- Mixed Dal Dhokla
- Besan Dhokla
- Chana Dal Dhokla
RAVA DHOKLA | WHITE RAVA DHOKLA

INGREDIENTS :
- 1 cup semolina/rava (रवा)
- 1 cup butter milk / curd (ताक /दही)
- ½ tsp citric acid (लिम्बुसत्व) (optional)
- 6-7 green chillies (हिरव्या मिरच्या)
- ½ inch ginger (आलं)
- 1 tsp sugar (साखर)
- ½ tsp baking soda (खायचा सोडा)
- Salt to taste
FOR GARNISHING :
- 1 tsp mustard seeds (मोहरी)
- 1 tsp cumin seeds (जिरा)
- Curry leaves (कडीपत्ता)
- Coriander leaves (कोथिंबीर)
- Cooking oil
METHOD :
- In a steamer first keep the water for boiling.
- Now grind(वाटणे) the green chillies,garlic,citric acid and sugar to a fine paste.
- Add semolina/rava to a bowl.
- Mix the grinded paste to the above batter.
- Then add curd to the bowl.
- Mix all the ingredients properly.
- At last add the baking soda to the batter and again give it a quick mix.
- Mix till the batter becomes a bit fluffy.
- Now immidately pour the batter into a greased plate.
- Keep this plate into the steamer and steam it for next 10-15 minutes.
- After 15 minutes remove the the plate and let it cool for few minutes.
- Now in a pan add a oil and let it get warmer.
- To this hot oil add mustard seeds,cumin seeds,curry leaves and give it a quick tempering(फोडणी देणे).
- Pour this hot tempering over the dhokla’s.
- Now garnish it with the coriander leaves.
- Now cut the dhokla’s into a square pieces.
- Your White Rava Dhokla is ready to eat.
RECIPE NOTE :
- Boil the water in the steamer first and then keep the dhoklas for steaming.
- Simple trick to a fluffy dhokla is that beat the batter well. The more you beat the batter; more air is incorporated in the batter, resulting in soft-spongy dhokla’s. Just remember to beat the batter before adding soda.
- After adding baking soda, don’t let the batter sit for a long while. Steam it right away.
- Steam for 10-15 minutes only don’t over cook or else the dhokla’s would become hard and dry.
