Coconut Kheer Recipe | Rice Coconut Milk Pudding is a healthy and delicious sweet dish.Kheer is also known by different names like Kheeri or Payesh, Payasam or Phirni in different parts of India.It is a sweet dish and a type of wet pudding popular in the Indian subcontinent, usually made by boiling milk,fresh grounded coconut or dessicated coconut,sugar or jaggery, and rice, although rice may be substituted with one of the following dals, daliya(broken wheat), millet, tapioca(sabudana) or vermicelli(seviyan).

Here I am preparing the Maharashtrian style rice pudding where rice, fresh coconut and milk are used to make this appealing sweet dish.It is also the easiest dessert to cook for many auspicious occassions.

It is often served with puri’s.This delicious rice kheer can be made for any festival or celebration  or also as a sweet dessert which you can serve after meals.

Although the main ingredient is fresh ground coconut, there is also a tiny amount of rice used. It gives thickness to the kheer and also makes it creamy. Both rice and fresh coconut ground separately and are then cooked in milk, until creamy and rich.

Coconut Kheer Recipe | Rice Coconut Milk Pudding

(1 CUP = 200 ML)

Ingredients :

  • 1/4 cup soaked rice
  • 1 cup freshly grated coconut
  •  Sugar as per taste
  • 1 litre Full fat milk
  • 2-3 tbsp desi ghee
  • 1/4 tsp cardamom/elaichi powder
  • Kesar,pista,kaju,almonds,etc.for garnishing

Method :

  • Wash the rice with water and let it drain aside.
  • In a pan add 1/2 tspoon of ghee and now roast the drained rice in it .
  • Now grind the fried rice coarsely.
  • Now remove the black part of the coconut.
  • Cut it into slices.
  • Add it to mixer jar.
  • Grind it to a fine paste.
  • Add water to the coconut mix if required.
  • Now add remaining ghee to the pan.
  • To it add coarsely grinded rice and saute it .
  • Add some water to the rice powder.
  • Now cook it on low flame until rice powder is cooked completely.
  • Now add the coconut paste mixture to the pan.
  • Mix both well.
  • Now add warm milk to the mixture.
  • Obtain required consistency.
  • Take care that lumps are not formed.
  • Let the mixture cook for next 10-15 minutes.
  • After that add cardamon powder for flavouring.
  • Your Coconut kheer is ready.
  • Garnish the kheer with chopped dry fruits.
  • Serve this kheer or pudding with Puri’s or on any festival or celebration  or also as a sweet dessert after meals.

Step By Step Method Of Preparing Coconut Kheer Recipe | Rice Coconut Milk Pudding :
